Evan Lee PhD

Dr. Evan Lee is a Harvard-trained researcher and educator specializing in immunology and microbiology.
He conducted advanced research at Massachusetts General Hospital, a core teaching affiliate of Harvard Medical School, where he built deep expertise in human immune responses, microbial interactions, and fermentation metabolism.

His work focuses on the biological impact of food systems, examining how gut microbiota, sugar metabolism, and dairy digestion influence the human body. During his time at Harvard, early fermentation and microbiology experiments evolved into a data-driven approach that reframes food not as a matter of taste alone, but as a biologically engineered structure.

Dr. Lee currently teaches biology and microbiology at leading universities in the New York area, combining academic research with education. Across both domains, his work is guided by a single question:
How does food interact with the human body at a biological level?

At Kate & Lulu Ice Cream, Dr. Lee oversees the design of all core base recipes and product structures. Each formulation is developed using a scientific framework that accounts for gut microbiome balance, immune response, and digestive load, redefining ice cream as a precisely engineered dessert rather than a conventional indulgence.

His mission is clear.
To apply Harvard-level scientific training and research rigor to create a new standard of ice cream where sweetness and science coexist.

Roy Kim (Kim Jong Heon)

Founder

He began his career as the Executive Director of Brand Development at Seven Monkeys, where he successfully launched multiple F&B concepts and led the company’s brand portfolio strategy. As a founding member of Zoo Coffee, he played a pivotal role in shaping the brand’s identity, building its operational framework, and establishing the core engine for its early-stage growth.

He went on to become the Founder, CEO, and Chairman of Billy Angel Cake Company, setting a new benchmark in Korea’s premium dessert café sector. Under his leadership, the brand expanded nationwide and achieved a successful Exit in 2023.

Today, he leads the Korean franchise, distribution, and brand strategy of Brooklyn Soju Company, leveraging deep expertise across F&B and lifestyle categories to drive market expansion and elevate brand equity.
